Recently, I visited a friend (“K”) who likes to experiment while cooking. She created a simple and yummy starter which I liked a lot:
Vegetable base:
Pickled Beetroot, finely cubed – put into a food ring and gently press down. Sweet and mellow apple, finely cubed – put on top of beetroot, press down.
Remove food ring.
Dressing:
1 teaspoon of mustard
1 teaspoon of honey
1-2 table spoons of dill oil
Fresh dill.
Stir until the dressing is well emulsified and has a smooth consistency.
Finish:
Spoon dressing on top of the apples.
Serve with smoked salmon.
Enjoy!
